Recipe du Jour: Tomato Basil Salad
In the warmer months, when it’s hot and sticky out, there’s nothing better than to come inside and enjoy a cool, refreshing meal.
Here’s one of my favorite salad recipes, filled with fresh, Italian-inspired flavours. As with all my recipes, this one’s quick and stupidly simple. If I ever were to write a cook book, it would be called: “Ain’t Nobody Got Time For That: Things To Eat In 5 Minutes or Less”.
All you’ll need to whip up this bad boy are three main ingredients: vine-ripened tomatoes, fresh basil, and some red onion. You’ll also need olive oil, balsamic vinegar, sea salt, and black pepper. (Fresh mozzarella or bocconcini cheese is optional.)
Finely dice two medium sized vine-ripened tomatoes and throw ‘em in a bowl.
Lay a few basil leaves on top of each other and slice them into thin strips.
Chop some red onion and throw those on there too. (If you have a date later in the day, it might be a good idea to skip this step.)
Add a pinch of sea salt and some freshly ground black pepper.
Drizzle a generous amount of extra virgin olive oil on there. Don’t be afraid of the fat – it’s marvellous for your hair, skin, and body in general.
Add a splash of balsamic vinegar. This bit of of sweetness and tartness really adds dimension to the salad.
If you fancy it, now would be a good time to add that fresh mozzarella or bocconcini cheese. I skip it, because it’s healthier this way.
Toss it all together and wham bam kablam! Lunch (or a great side dish) is served.
