Recipe du Jour: Veg Scramble
You really can’t screw up scrambled eggs. (Though Gordon Ramsay would disagree.)
They’re quick, delicious, and fuss-free. And as great as plain ‘ol scrambled eggs are, adding in some veggies makes them even better. You won’t even notice you’re eating something healthy!
This is my favourite egg scramble recipe, and one I’ve been making a ton lately. It takes slightly more time to make than say, a bowl of cereal, so it’s a great thing to make on weekends when you’re less pressed for time.
Here’s what you’ll need to make my signature dish:
- 3 organic, free-run eggs
- 1 vine-ripened tomato
- a handful of baby spinach
- a couple of crimini mushrooms
- some red onion
- fresh chives
- (optional) feta cheese – I use light feta
- olive oil
- sea salt & freshly ground black pepper
What’s great about a veg scramble is that you can use whatever you have in your fridge to make it. This is just my personal favorite veggie combo.
Start by washing and chopping up your mushrooms, tomato, and onion, and throwing them in a pan with a little bit of olive oil.
These take the longest to cook, that’s why they’re going in first.
Let them sweat it out for a few minutes, stirring occasionally. When you see the onions start to go transparent…
…throw your spinach in.
Once the spinach has begun to wilt, crack your eggs right in the pan.
No need to get another dish dirty by whisking them first!
Add a pinch of sea salt and some freshly ground black pepper, and stir that all together.
Once the eggs are almost completely cooked, crumble a bit of feta on top. Take the pan off the fire and let it finish cooking on residual heat for a minute. This will make the feta just slightly melty, and prevent the eggs from overcooking.
Serve it up with a little more black pepper on top, and sprinkle some chopped fresh chives.
