Recipe du Jour: Watermelon Salad
With autumn just around the corner, this end-of-summer recipe takes full advantage of ingredients that are currently in season before they disappear for the long, cold winter: watermelon and berries.
This salad is both beautiful and refreshing, making it an ideal side dish for summer entertaining, or a light and healthy meal for one.
Shopping List:
- watermelon
- strawberries
- fresh mint
- feta cheese
- red onion
- english cucumber
- ground black pepper
- extra virgin olive oil
Chop up all your ingredients. For contrast in size, cut the watermelon into large (but not unmanageable) hunks, and the feta into small cubes. Lay your mint leaves on top of one another and slice into long strips.
Toss those together into a bowl.
Add a little freshly ground black pepper. You can skip this step if pepper with fruit makes you uncomfortable, but I really like it. (Also this recipe doesn’t require salt – the feta cheese is plenty salty on its own.)
Drizzle a small amount of olive oil over everything, and voila, you’re finished! You can add a bit of balsamic vinegar if you so choose, but I prefer it without.
Garnish with a couple of whole mint leaves for the prettiness factor.
